GF Banana muffins!


Hi y'all!  It's been a couple weeks since I last posted, so I decided to get with the bloggin' program and post a recipe! ;)

As you all know, my friend Victoria gave me the book: The Cake Doctor Bakes Gluten Free last year since she thought I should learn to take some shortcuts! ;)

Since I can leave NOTHING alone, here is my GF Banana Muffin Recipe loosely based on the Cake Doctor's recipe:



GF Banana Muffins:
(Yields approx. 24 muffins)
Preheat oven to 350 degrees Farenheit

Ingredients:

1box GF Yellow Cake Mix (I make my own mix but use the Betty Crocker or Bob's Red Mill brands occasionally)

1/2 box GF Vanilla (Dry) Instant Pudding Mix (TRUST ME ON THIS ONE)

1/2 Unsalted Butter- softened at room temp (Please DON'T use oil, again, TRUST me!)

2 Mashed overly-ripe Bananas

1/4c Sour Cream or Yogurt (I prefer Low-fat Greek Yogurt for added protein)

3 large eggs

3tbs Orange Juice or Milk (I prefer the latter)

1tbs Pure Vanilla Extract

Optional: 1c chocolate chips or chopped walnuts

Method:

In a stand-up mixer, add butter, milk, yogurt, vanilla, and bananas- combine on low but do not over-mix.  Add eggs in one at a time, then slowly add dry ingredients.  Again, do not over-mix but make sure it's combined thoroughly. Take off mixer, and stir in chocolate chips and/or walnuts.  Using a scoop, fill cupcake liners to about halfway.  Place in oven for about 20 minutes or until toothpick inserted in center comes out clean.
