Hi y'all! Welcome to the first edition of "Gluten-Free Fridays"! Today I'm going to share my GF meatball recipe, the freezer meal edition! Now most recipes call for three types of ground meat, but due to the dietary issues in my household, I can only use ground beef. Also, I sneak veggies into these babies!
Prep time: 10 minutes
Cooking time: 15minutes
Ingredients:
-2 lbs Ground Beef
-2 cloves fresh garlic, minced
-salt and pepper to taste
-1 1/2 cups of GF Breadcrumbs (method below)
-1/2c Parmesan Cheese
-1tbs dry basil
-1tsp dry oregano
-2 eggs
- 1/4c GF Flour (All purpose)
-(optional) 2 carrots finely minced in food processor
Method:
(Preheat oven to 375 degrees F.)
Mix all ingredients (but leave about half of the GF flour on a plate) in a bowl, thoroughly. Stream some olive oil over it all to add a little more binding to it. Form balls and roll in the left over GF flour. Place meatballs in a pan and cook halfway through at 375 degrees F in the oven. (approx. 15 minutes.) Freeze.
Then when you need a quick meal, finish roasting them in the oven at the same temperature for about 15 more minutes. I serve them with homemade gravy and mashed potatoes.
