Hello!! I see I have some new followers since the last post! Welcome and THANK YOU! (In my head, every time I see a new follower or a comment I hear "THEY LIKE ME! THEY REALLY LIKE ME!" hahaha!) So back to the post! I have decided to share my recipe for Gluten Free Apple Cinnamon Crepes with you today! My kids LOVE these and we are all kind of obsessed with breakfast foods, so this may be served at any time during the day! :)
2c Brown Rice Flour
2c Milk
4 Eggs (1 egg per 1/2 c of Flour)
1tbsp melted butter (I know that's a lot...but it's SO good!)
1tsp salt
3tbs Apple Butter (I buy mine at a local farm but you can purchase this from most Natural food stores)
1tsp Pure Vanilla Extract
1tsp Cinnamon Powder
1/4 tsp Raw Organic Sugar (optional)
Method:
Sift your flour to avoid clumps, mix dry into wet with a whisk. Consistency should be runny, yet not watery. If your batter is too thick, add either water or milk 1tsp at a time until you reach the desired consistency. It should look like this: (also, here is the Apple Butter I use.)
Grease your pan and heat it on Medium heat. Ladle out only enough to cover about half the pan's diameter. Then pick up the pan, and in a circular motion, spread out the batter until it reaches the edges. Crepes are meant to be thin. When you see bubbles in the center of the batter, and the edges are starting to release from the pan, then flip it to finish cooking the other side. The crepe should be lightly browned and will only take about half a minute to a minute to fully cook.
Serve rolled up and stuffed with homemade whipped cream (see my recipe for whipped cream here) and baked cinnamon and brown sugar apples, lightly drizzle with real maple syrup. Yes. THEY'RE HEAVENLY!! :)
