About Erika, Our Contributor

After graduating from Harvard University with high ideals and the promise of greatness, Erika packed up her stuff, her boyfriend, and their car and headed out West. No seriously, she headed to Colorado because that's where her Mommy and Daddy live and she wanted to go home. After 11 years of various jobs which included being a Teller, an Account Executive and a Wedding Planner, she packed up her stuff, her husband,  her two kids, her dog and her cat and moved to New Jersey.

Erika was tired.

Thinking that becoming a stay-at-home mom would offer her brain some relaxation, Erika chose to stay home and raise her two little boys. This proved to be the most challenging thing ever accomplished in the Western world.  Add on to this the brilliant idea of fostering children and starting a cooking business with one of her best friends and you can only imagine the amount of rest that Erika now gets.

Zero.

Fast-forward to the present. Erika now has two rambunctious little boys and a little girl, also known as Princess Sassafrass. Her husband thinks that she is alternately lovely and a candidate for Bedlam. Her garden has tomatoes, beans, banana peppers, lemon balm, swiss chard, basil, celery, and a small rabbit growing in it. The compost pile has not been turned in 2 years. However, everyone eats well. Everyone laughs a lot, and Erika's kids have been known to say, "Mama! Can you make this? I bet it would taste better if you made it from scratch!"
