Guinness Beef Stew Recipe-GYCO Challenge


Hi y'all! Today I'm joining in on an awesome challenge over at Four Marrs and One Venus and at White Lights on Wednesday!  It's the always fun, "Get Your Chef On" challenge! This month's challenge: BEER! 

Now, I make some incredible fajitas with Coronas, but seeing that it was March and the month of the Irish, I decided to go with an Irish stout instead!  I went with Guinness.  Now the DISCLAIMER! Given that this is normally a Gluten-Free blog, I MUST tell you that beer is NOT gluten free.  Matter of fact, it's chock full of gluten since it's made from barley!  Okay, now back to your regularly scheduled recipe.


 I had seen an episode of "Diners, Drive ins and Dives" where good old Guy Fieri went to an Irish pub where they served Guiness Stew.  Just from watching the look on his face as he tried it, I knew I had to figure out how to make it and try it for myself!  (Sigh.  Darn you Food Network, Darn you!)

So I made up my own recipe.  Sorry to any Irish folks out there who might actually know the proper or traditional recipe!


Ingredients:
(Prep: 1 Day)
(Cook Time: 3 hours)

-1tbsp Olive Oil
-3lbs Boneless Flank Steak
-2 cloves crushed garlic
-1 Medium Onion
-1 Sweet and Mild Red Pepper
-2c Baby Carrots
-Dry Rub* (Recipe below) 
-1tsp Dry Rosemary
-Two Twigs of Fresh Thyme
-1 1/2c Guinness Stout Beer
-1 1/2c Low Sodium Beef Stock
-1tbsp Corn Starch
-1/2 Cold Water
-Salt and Pepper to taste

Method:

One day ahead, apply the dry rub to the flank steak and refrigerate overnight (or at least 3 hours prior to cooking).  In a large Dutch Oven over medium heat, add olive oil to hot pot, then add crushed garlic and allow to brown.  Add onions and peppers and cook them down until translucent.  Add Steak to Dutch Oven and allow to sear and brown.  Once seared, deglaze with the Guinness Beer and Beef Stock, making sure there is enough liquid to cover beef.  Reduce heat to low and simmer for 3 hours. Towards the end of the 3rd hour thoroughly combine the cornstarch with the cold water in a cup and add to the pot and bring to boil to thicken sauce.  Serve over creamy mashed potatoes.

Dry Rub:

1tsp Ground Chipotle Chili Pepper
1tsp Ground Chili Pepper
1tbsp Garlic powder
2tsp Ground Coriander 
1tsp dry Thyme
Salt and Pepper to taste
