Gluten Free Pizza Muffins


A while back, Natalie from A Turtle's Life for me was gracious enough to allow me to guest post on her blog!  In case you missed it, here is the post!


A few weeks ago, I found myself on Pinterest (surprise, surprise) and saw some awesome pizza muffins!  I thought I'd try and make them but of course GF!  I've been trying something lately, it's called NOT making EVERYTHING from scratch, again just to simplify my overly-complicated world! :) So I bought some GF Bisquik and decided to create a semi-homemade recipe for GF Pizza muffins!



First of all, follow the indications on the back of the box for biscuits, EXCEPT substitute BUTTER for the oil, then add the following:

3tbs of Sour Cream (I add sour cream to every GF baked goods recipe, as it helps to add some moisture and gives the bread a better consistency)

1/2 c of grated Mozzarella Cheese

1/4 c of grated Parmigiano Reggiano

2 tsp of tomato sauce or Marinara

1/2 c of chopped up Pepperoni (or other topping if you don't like this one)

A pinch of dry oregano

A pinch of dry Basil

Bake according to the instructions on the box and in about 20 minutes you will have amazing, cheesy and gooey Pizza muffins!  Tip: Make a double batch and freeze in individual servings for quick after school snacks. Warm them up in a small toaster oven and serve with some marinara!  ENJOY!
