GF Pumpkin Pancake Recipe

I love Fall. Why?  Pumpkins and Cranberries, that's why.  Yesterday, I cooked with both!  In the morning, I made my son's favorite pancakes in the world, pumpkin pancakes!  Here is my recipe for the GF version:


GF Pumpkin Pancakes:

Ingredients:

3/4c Milk
2tsp White Vinegar
1c GF All Purpose Flour Mix ( I like Bob's Red Mill brand)
1tsp Baking Powder
1/2tsp Baking Soda
Pinch of salt
1 Egg
1tbsp melted Butter
3-4tbsp of Pumpkin Butter

Method:

In a separate bowl, add 2tsp of White Vinegar to Milk, this makes "Buttermilk".  Set aside while preparing batter.  Mix dry ingredients, add wet ingredients (including milk) whisking together.  Be careful not to over mix.  Add Pumpkin Butter and melted butter.  Mix thoroughly.  In a hot slightly buttered pan/griddle, ladle batter, cook on Med heat for about 1 minute each side. DO NOT flip pancake until bubbles appear.  Serve with whipped cream and syrup! :) Enjoy!!!
